Earl Grey macarons have a strong bergamot flavor from the finely ground tea in the shell and custardy filling.

Don't worry: If you can follow directions, you can make macarons!

Gather Earl Grey tea, hot water, granulated sugar,

eggs, unsalted butter, almond flour, powdered sugar, and black gel food coloring (optional).

Grind the Earl Grey tea and granulated sugar together in a mortar and pestle.

(You can also use a food processor, if you like.)

Sift or process the almond flour and powdered sugar together.

Separate four egg whites into the bowl of a stand mixer, reserving the yolks.

Whisk the egg whites on low until frothy, then sprinkle in the Earl Grey sugar.

Add a drop of black gel food coloring, if desired.

Increase the speed to medium and whisk until the meringue forms stiff peaks, like this.

Add the almond flour mixture to the meringue, then fold together with a spatula.

Continue folding the mixture (this is called macaronaging) until the batter easily flows off the spatula in ribbons.

Transfer the batter to a piping bag fitted with a medium round tip, like Wilton #10.

Pipe the macarons onto silicone macaron mats or parchment paper.

Let rest until the macarons have developed a skin (20-60 minutes).

Bake for 17 minutes at 320°F or 160°C.

Let the macarons cool completely before removing them.

Meanwhile, stir together the reserved yolks in the bowl of a stand mixer.

Heat sugar and Earl Grey tea in a small saucepan to the firm ball stage (245°F or 118°C).

then carefully pour the syrup down the side of the bowl.

Begin whisking the egg yolks on medium speed,

Whisk the custard together until pale and fluffy, then add butter one piece at a time.

Beat until fluffy, then transfer to a piping bag.

Fill the macarons with one large dollop of buttercream or a few smaller dollops.

Top with a similarly-sized shell.
