Heart-shaped dark chocolate raspberry macarons are the best way to celebrate Valentine's Day!

Delicate sandwich cookies are made with a raspberry shell and an easy raspberry ganache.

Gather eggs, granulated sugar, powdered sugar,

heavy cream, almond flour, freeze-dried raspberries

and a raspberry-flavored chocolate bar.

Finely grind the freeze-dried raspberries in a food processor, then add almond flour and powdered sugar.

Pulse until just combined, then set aside.

Separate the eggs and place the whites in the bowl of a stand mixer.

Whisk on low until frothy.

Sprinkle in the granulated sugar and increase speed to medium.

Whisk until stiff peaks form.

If desired, add red gel food coloring to make red Valentine's Day hearts.

Add half of the almond flour mixture, then fold together with a spatula.

Repeat with the second half of the almond flour mixture.

Continue folding the batter until it runs off the spatula in ribbons, like this.

Transfer to a piping bag and pipe hearts or circles onto silicone mats or parchment paper.

Rest until dull, then bake at 320°F/160°C for about 17 minutes.

While the macarons rest, pour warm heavy cream over the raspberry chocolate.

Whisk until combined, then set aside to cool slightly.

Pair similarly-sized macarons together, then pipe 3-4 dollops of ganache onto the back of one macaron shell.

Sandwich with another macaron shell, then repeat!
