One-Pot Chicken & Brown Rice

This gluten-free, one-pot chicken and brown rice has protein, veggies, carbs, fiber, lots of flavor, and easy cleanup!

It comes together quickly and slow-cooks over the stove for a mostly hands-off dinner.

Gather an onion, spices, corn, broth, chicken,

brown rice, salsa, black beans, olive oil, & garlic.

Dice the onion, and mince the garlic.

Heat olive oil in a Dutch oven or large pot, then saute the onion.

Add the garlic and cook until fragrant (1 min).

Add brown rice, corn, salsa, beans, and broth.

Stir to incorporate.

Add the spices, and stir to combine.

Bring to a boil.

Add two chicken breasts to the center of the pot.

Use frozen or thawed chicken—both work!

Cover and simmer for 45 minutes on low.

Use two forks to shred the chicken, then stir to combine.

I like to serve this in bowls with tortilla chips, shredded cheese, lime wedges, cilantro, and flaky salt.
