You can make crispy, chewy, thin crust pizza dough with just  a handful of simple ingredients on a  pizza stone.

This recipe makes four 12″ pizzas (enough for eight servings!) but is easily scaled up or down.

Gather yeast, sugar, warm water, whole wheat & all-purpose flours, salt, and olive oil.

Make this dough in a stand mixer or by hand.

Activate your yeast in warm water with the sugar. Let sit until frothy, about 5 minutes.

Add in all remaining ingredients and stir together until it becomes a shaggy dough.

Knead for 10-15 minutes in a stand mixer, or 15-20 minutes if kneading by hand.

The dough will be tacky but not sticky.

Use the windowpane test on a small piece of dough to check its gluten development.

If the dough stretches enough to see light through it, it has enough gluten!

Divide the dough into four pieces, then shape into balls.

Place on a baking sheet lined with parchment paper, then cover with a kitchen towel.

Proof for one hour, or until doubled in size.

Place any dough you don't plan to use today in an airtight container.

Store in the fridge for up to three days or the freezer for up to three months!

Roll out your remaining dough balls one at a time until they are 12" in diameter.

Transfer to a pizza peel dusted with flour. Now you're ready to add your favorite toppings and bake!
