Easy Gochujang Chicken Ramen

You can have a flavorful ramen with caramelized onion, garlic, and fresh ginger in about 30 minutes!

This recipe makes two bowls but can easily be doubled.

Gather hard-cooked eggs, chicken broth,

butter, soy sauce, ramen noodles, sesame seeds,

onion, garlic, ginger, cooked chicken,

gochujang, hot chili oil (optional), and green onions.

Slice half of a yellow onion into half-moon slices about ¼” (6 mm) thick.

Mine the garlic, grate the ginger, and dice the green onions.

Melt the butter and hot chili oil in a medium pot over medium heat.

Once the fat starts to steam, add the onion.

Saute the onion for about five minutes, stirring frequently, until wilted.

Then reduce the heat to low and cook, stirring, for another five minutes.

It's easy to burn onions rather than caramelize them, so it's important to stir frequently and reduce the temperature.

If they look like this, you'll want to start over.

Once the onions have caramelized, add the garlic and ginger.

Cook for one minute until fragrant.

Add the gochujang and soy sauce, and stir to combine.

Cook for one minute to reduce the mixture.

Pour in the chicken broth and add the shredded chicken.

Bring to a boil.

Add the ramen noodles and cook according to package directions.

Fresh ramen noodles are also great!

Divide the ramen into two bowls, and  top with hard-cooked eggs, green onions, and sesame seeds.
