This lightly sweetened blueberry syrup goes great on pancakes and French toast!

With just two tablespoons of sugar, this is a healthier option than a traditional blueberry simple syrup.

Gather sugar, lemon juice, and blueberries.

Add all the ingredients to a small pot, then stir together.

Bring to a boil over medium heat until the berries darken, like this.

Cook for another 3-5 minutes to reduce the syrup somewhat, then remove from heat.

The longer the cook time, the thicker the syrup will be when cooled.

If the blueberry syrup threatens to boil over (it tends to), quickly remove from heat and stir.

Then return to heat and continue cooking.

If desired, you can remove the berries with a fine mesh strainer.
