Without the honey drizzle, this cake will stay fresh for up to five days in an airtight container at room temperature. When drizzled with honey, I recommend eating the cake within three days for the best texture.

Can I make this honey almond cake gluten-free?

I tried making this almond cake with only almond flour about 4 times, but I couldn't get the texture where I wanted it. Once I added all-purpose flour, the texture improved considerably, so I continued workshopping the recipe from there. I haven't tested it, but you should be able to use a 1:1 gluten-free flour mix with good results!

I don't have a round 9" cake pan. What else can I use?

Accepted Answer

A square 8" pan holds the same amount of batter as a 9" pan, so use that! I only tested baking this recipe in metal pans, so you may need to adjust the bake time by a few minutes if using a glass pan.
